Grass Fed Beef Tallow: Roasted Garlic

Beef tallow is rendered beef fat — specifically the fat from suet and caul fat, the dense fat deposits found around the kidneys and internal organs of cattle. Rendering removes the water and connective tissue, leaving behind a shelf-stable, pure cooking fat with a high smoke point and a mild, neutral flavour.

Tallow is not a new ingredient. It was the dominant cooking fat in Australian and British kitchens for generations — used for frying, roasting, baking, and as a natural fat source — before vegetable and seed oils became the industrial standard in the latter half of the twentieth century.

What makes Vital Origin Grass-Fed Beef Tallow different from modern cooking fats is primarily what it is not: it contains no seed oils, no chemical extraction solvents, no hydrogenation, and no additives. It is a single-ingredient whole food. The source cattle are 100% grass-fed and grass-finished on Australian regenerative farms, which affects both the fat profile and the fat-soluble vitamin content of the finished product (see Q2 and Q3 for the detail on that). It arrives in a glass jar — a deliberate choice for a fat that will often be heated (see Q5).

The four flavour variants in the Vital Origin range — Natural, Rosemary, Roasted Garlic, and Ginger Turmeric — all start from the same base: the same grass-fed, small-batch-rendered tallow. The difference is the culinary application (see Q7).

The fat profile of tallow is directly shaped by what the cattle ate. Grass-fed and grain-fed cattle produce different fat compositions — and the research on this is consistent.

Peer-reviewed literature on grass-fed vs grain-fed beef fat (Daley et al., Nutrition Journal, 2010, PMC2846864; and Benbrook et al., British Food Journal, summarised in PMC8728510) identifies several meaningful differences in grass-fed fat:

CLA (Conjugated Linoleic Acid). Grass-fed cattle produce substantially more CLA — a naturally occurring fatty acid found in ruminant fat and dairy — than grain-fed cattle. Estimates in the literature range from 2–5 times higher CLA in grass-fed fat compared to conventional grain-fed. CLA occurs naturally in tallow; it is not added or concentrated.

Omega-3 to omega-6 ratio. Grain-fed cattle have a significantly skewed omega-6:omega-3 ratio in their fat — often cited at 16:1 or higher. Grass-fed cattle fat is considerably more balanced, with the omega-6:omega-3 ratio in the range of 1.4:1 to 3:1 depending on the study. While tallow is not a primary omega-3 source (it is primarily saturated and monounsaturated), the proportion of omega-3s present is meaningfully higher in grass-fed fat.

Fat-soluble vitamins — particularly vitamins A, E, and K2. The USDA standard reference entry for beef tallow (FDC 171003) records vitamin A at or near zero — this is a known limitation of the generic database entry, which does not distinguish grass-fed from grain-fed. Independent lab testing by the Weston A. Price Foundation found retinol present in grass-fed tallow at 159–328 IU per 100g depending on source (white vs yellow tallow). Vitamin E (tocopherols) and carotenoids — which account for the yellowish colour of grass-fed tallow — are also consistently higher in grass-fed fat. Vitamin K2 (menaquinone) is found predominantly in animal-derived fats from grass-fed animals.

Carotenoids and phytonutrients. Cattle grazing on pasture ingest plant-derived carotenoids and polyphenols that transfer into the fat. The characteristic golden or yellow colour of quality grass-fed tallow is a visual indicator of higher carotenoid content. Grain-fed tallow tends to be white.

None of this is reason to overstate the case. Tallow — regardless of source — is primarily a saturated and monounsaturated cooking fat. Its nutritional advantage is not as a vitamin concentrate; it's as a stable, clean cooking fat that also happens to contain fat-soluble nutrients in their natural form. Grass-fed sourcing maximises those naturally occurring components.

A standard serving of cooking fat is approximately 14g — roughly one tablespoon. These baseline figures are calculated from USDA FoodData Central, FDC entry 171003 (Fat, beef tallow: https://fdc.nal.usda.gov/fdc-app.html#/food-details/171003/nutrients), with grass-fed-specific enrichment noted separately.

On vitamin A and K for grass-fed tallow: The USDA standard reference entry (FDC 171003) records vitamin A at or near zero and does not capture K2. This is a database limitation — the standard entry aggregates sources without distinguishing feeding method. Independent WAPF lab testing found retinol at 159–328 IU per 100g in grass-fed tallow (equivalent to approximately 22–46 µg RAE per 14g serve). Vitamin K2 (menaquinone) is present in grass-fed animal fats and is not captured in the USDA FDC panel, which tracks vitamin K1 (phylloquinone) only. Peer-reviewed literature consistently identifies grass-fed animal fat as meaningfully higher in K2 than grain-fed alternatives.

CLA. The figures above represent the range reported in published analysis of beef tallow. Grass-fed tallow consistently delivers more CLA than grain-fed tallow, though it is not a concentrated CLA supplement — it is a whole food.

What this profile means in context: Tallow is primarily a cooking and eating fat. Its value is not as a vitamin supplement — a serve of liver capsules delivers a far more concentrated fat-soluble vitamin hit. Tallow's value is as a clean, stable cooking fat that brings genuine fat-soluble nutrients along with it, rather than the oxidation byproducts that high-PUFA seed oils can produce at cooking temperatures (see Q6).

Beef tallow is one of the most versatile cooking fats available — and it excels specifically where most plant oils struggle: high-heat cooking.

High-heat applications (where tallow shines):

• Deep frying — hot chips, schnitzel, battered fish. Tallow was the original commercial frying fat before seed oils replaced it. McDonald's fried in beef tallow until 1990.
• Roasting — roast potatoes, root vegetables, root veg trays, roasted meats. Tallow at high oven temperatures (200–230°C) produces the crispy exterior that plant oils can't consistently deliver.
• Searing — steak, lamb chops, chicken thighs. Tallow's high smoke point means you can get a proper sear without the fat degrading.
• Stir-frying at high heat — see Q7 on the Ginger Turmeric flavour for this application specifically.
• Sautéing — onions, garlic, vegetables.

Lower-heat and finishing uses:

• Spreading on bread or toast — the Natural flavour works as a direct butter substitute.
• Finishing sauce — add a tablespoon of tallow to a pan sauce or resting meat.
• Basting — baste roasting meat or vegetables during cooking.
• Cooking eggs — tallow-fried eggs are a favourite in the carnivore and ancestral community.

As a fat source in an ancestral eating protocol: Some customers following a carnivore, keto, or animal-based diet use tallow directly as a fat source — added to coffee, blended into meals, or consumed with organ capsules to support fat-soluble nutrient absorption. Dietary fat aids the absorption of fat-soluble vitamins A, D, E, and K — relevant if you're also taking Vital Origin organ capsules.

Smoke point: Vital Origin tallow has a smoke point of approximately 204–215°C (400–420°F). This is well above the temperatures required for most frying and roasting applications, and considerably higher than butter (~150°C) and extra virgin olive oil (~160–190°C depending on quality). Refined seed oils can have higher technical smoke points, but that figure doesn't capture the oxidative stability difference — see Q6.

This is a deliberate product decision — and it matters more for tallow than for most foods.

Tallow is poured warm into jars during the packaging process. At elevated temperatures, plastic containers — including food-grade BPA-free plastics — can leach endocrine-disrupting compounds into fat. The lipophilic (fat-loving) nature of tallow means it can absorb these compounds more readily than water-based foods would.

This concern doesn't disappear at room temperature. Every time a customer scoops tallow from a jar, they may be warming it slightly — and plastic containers stored with fat over weeks or months present an ongoing low-level exposure risk that glass does not.

The organ capsule range comes in recyclable metal tins — appropriate for a dry, shelf-stable supplement where the endocrine disruptor concern doesn't apply in the same way. But for a cooking fat that is frequently warmed, scooped, and stored over time, glass is the only appropriate packaging material. Vital Origin made this choice deliberately, and we are not moving to plastic.

We also do not recommend purchasing tallow from any brand that packages it in plastic jars. The cost saving is not worth it.

This is a question worth answering factually, because it gets framed emotionally on both sides. Here is what the science actually says about the differences.

Different fat compositions. Tallow is approximately 50% saturated fat and 42% monounsaturated fat, with around 4% polyunsaturated fat (PUFA). Common seed oils — canola, sunflower, soybean, cottonseed, rice bran — are predominantly PUFA, often 60–75% or more. This is not a subjective difference; it is a compositional one with direct implications for how each fat behaves under heat.

Heat stability is determined by fat composition. Saturated fats have no double bonds in their carbon chain — they are chemically stable and resistant to oxidation. Monounsaturated fats have one double bond — more stable than PUFA. Polyunsaturated fats have multiple double bonds — they are more reactive, more prone to oxidation, and less stable under the heat and oxygen exposure of cooking. This is not contested chemistry; it is basic lipid biochemistry. A fat high in PUFA degrades more readily at cooking temperatures than a fat high in saturated fat.

Processing. Most commercial seed oils are extracted using chemical solvents (hexane), then refined, bleached, and deodorised (the RBD process) — a multi-stage industrial process that involves high heat and chemical inputs. Vital Origin tallow is rendered from grass-fed suet fat — no chemical extraction, no solvent, no refining agents. The processing contrast is significant.

Smoke point comparison. Tallow: ~204–215°C. Butter: ~150°C. Extra virgin olive oil: ~160–190°C. Refined canola oil: ~200–230°C. On smoke point alone, refined seed oils and tallow are comparable. But smoke point does not capture oxidative stability — a fat can have a high smoke point and still produce oxidation byproducts at cooking temperature if it is high in PUFA. This is why smoke point is only one part of the comparison.

What we won't say. We do not claim that seed oils cause any specific disease. The research landscape on dietary fat and cardiovascular disease is complex, contested, and evolving. The original Ancel Keys-era hypothesis that saturated fat causes cardiovascular disease has been significantly challenged by subsequent meta-analyses, but the science is not simple. We frame this factually: tallow and seed oils have different fat compositions, different processing histories, and different heat stability profiles. The cooking and health case for traditional fats like tallow rests on those factual differences — not on fear-based claims about seed oils.

If you're reading the literature on this yourself, a useful starting point is Ramsden et al. (PMID 27071971, BMJ 2016), which re-examined the original Minnesota Coronary Experiment data on dietary fat substitution. And PMID 40416032 (cited in our legacy tallow FAQ) on recent data on saturated fat and cardiovascular disease.

All four flavour variants start from the same base: 100% grass-fed, small-batch-rendered Australian beef tallow. The flavour additions are simple and clean — no preservatives, no artificial flavour compounds.

Natural
The unflavoured base. Mild, neutral, with just a faint beefy warmth when cooking at high heat — not noticeable in most dishes. This is the most versatile variant: suitable for all cooking applications, spreading, basting, and as a daily cooking fat substitute. If you buy one tallow, start here. Available in 250mL and 500mL.

Rosemary
Infused with rosemary. Best for: roasted meats (lamb, chicken, beef), roasted potatoes and root vegetables, oven-baked dishes. The rosemary integrates into the fat during cooking and produces a deeply savoury result. Particularly suited to the oven (180–220°C range). Available in 250mL only.

Roasted Garlic
Infused with roasted garlic. Best for: sautéing vegetables, pan sauces, finishing steaks, cooking mushrooms, spreading on bread and toast. The roasted (not raw) garlic flavour is mellow and rounded rather than sharp. One of the most versatile flavoured variants. Available in 250mL only.

Ginger Turmeric
Infused with ginger and turmeric. Best for: stir-fries, Asian-inspired dishes, curries, roasted cauliflower and sweet potato, cooking eggs. The turmeric gives the tallow a vivid golden colour and earthy warmth. Available in 250mL only.

On allergens: The Natural variant contains no allergens beyond the named ingredient (beef tallow). The flavoured variants contain the named spice/herb additions. None of the four variants contain gluten, dairy, nuts, soy, or other common allergens. If you have a specific allergy concern, contact us directly before purchasing.

Vital Origin tallow is rendered in small batches from suet and caul fat sourced from our grass-fed, grass-finished supply chain. The rendering process is simple: the raw fat is melted at low temperature over time, allowing the pure fat to separate from the connective tissue and water content, which are removed. No chemical solvents, no hexane extraction, no refining agents, no bleaching, no deodorising.

Low-temperature rendering matters for the same reason that low-temperature freeze-drying matters in our organ capsule range: heat affects fat-soluble vitamins and the structural integrity of the fat. High-temperature industrial rendering (used in large-scale commodity tallow production for the food industry) degrades the fat more aggressively than small-batch, slow, low-temperature rendering.

The result is a clean, stable fat with nothing added. What you see in the jar is pure rendered beef fat from grass-fed Australian cattle — and the named herb or spice in the flavoured variants.

Provenir processes at the farm rather than at a remote industrial facility. Yes — unequivocally. Grass-fed beef tallow is one of the most on-protocol foods for any of these frameworks.

Carnivore: Tallow is 100% animal-derived. Zero plant content (in the Natural variant). Carnivore-appropriate by any definition.

Keto: Zero carbohydrates, zero protein, 100% fat. The fat composition — predominantly saturated and monounsaturated — is exactly what the keto community looks for in a cooking fat. No seed oils, no additives.

Paleo: Traditional animal fat, no industrial processing, no additives. Tallow is arguably the most paleo-appropriate cooking fat available — it is the fat our ancestors cooked with for thousands of years.

Animal-based / ancestral: Tallow is the anchor fat in an animal-based eating framework. It pairs naturally with organ supplements — dietary fat supports the absorption of fat-soluble vitamins A, D, E, and K present in liver, kidney, and multi-organ products (see Q14).

The flavoured variants add only the named herb or spice. All four variants are gluten-free, dairy-free, and free from common allergens.

Generally, no — and this surprises most first-time users.

Properly rendered tallow has a very mild flavour. At room temperature, the Natural variant has essentially no detectable odour. When heated, there is a faint, warm beefy note — but it dissipates quickly and does not transfer a strong beef flavour to dishes. This is why tallow works for a wide range of applications beyond red meat cooking: it handles eggs, potatoes, vegetables, and even baked goods without making them taste like a steak.

The yellow or golden colour of grass-fed tallow (from carotenoids) is sometimes mistaken for a flavour signal — it is not. Colour reflects the carotenoid content of the fat; it does not predict flavour intensity.

The flavoured variants (Rosemary, Roasted Garlic, Ginger Turmeric) will obviously impart their flavour — that is the point. But the base fat itself is neutral enough that it works in virtually any savoury cooking context.

If you are using tallow for the first time, start with cooking potatoes or eggs. Most people are surprised by how clean and neutral the result is.

Beef tallow is shelf-stable at room temperature. You do not need to refrigerate it.

Store in a cool, dark cupboard away from direct sunlight and heat sources. A pantry is ideal. The fat will remain soft and easy to scoop at Australian room temperature in warmer months, and will solidify more in cooler weather — both are normal. If your tallow solidifies, it is perfectly fine; scoop it out and it will melt quickly in the pan.

Shelf life: Vital Origin tallow has a shelf life of 2 years from the manufacturing date, stored at room temperature in the sealed glass jar. Once opened, consume within a reasonable timeframe — typically 6–12 months — keeping the lid clean and the jar in a dark cupboard. Because tallow is predominantly saturated fat, it is far more resistant to rancidity than high-PUFA oils, which can turn rancid rapidly, particularly after opening.

You can also refrigerate or freeze tallow if you prefer — it will keep indefinitely frozen. Allow it to come to room temperature before scooping if solidified from refrigeration.

Yes — some of our customers do, and tallow has a long history of use as a topical fat in traditional cultures. Beef tallow has a lipid profile that is broadly similar to the sebum (natural skin oil) that human skin produces, which is part of why some people find it well-tolerated on skin.

That said, the jarred tallow range is primarily a cooking and eating product. The tallow you cook with is absolutely clean and skin-safe — but if skincare is your primary goal, we make a dedicated product for that: the Vital Origin Tallow Soap Bar, available in Lavender and Lemon Myrtle or Unscented variants. The soap bar is formulated with skincare use in mind, with appropriate herb and essential oil additions for a topical product.

One thing worth knowing about tallow on skin: it has a mild beefy aroma at skin temperature. This is particularly noticeable when applied neat. Yes — and there is a genuine nutritional reason to pair them.

Fat-soluble vitamins — vitamins A, D, E, and K — require dietary fat for absorption. Organ capsules, particularly Beef Liver Capsules and Ancestral Woman, contain meaningful amounts of preformed vitamin A and other fat-soluble nutrients. Cooking with tallow, or consuming tallow in the same meal as your organ capsules, supports the absorption of those fat-soluble nutrients.

250mL jar — the right starting point for most households. At the standard serving of approximately one tablespoon (14g) per use, a 250mL jar contains roughly 17–18 uses. For a single person or couple cooking with tallow once daily, a 250mL jar lasts approximately 2–3 weeks.

500mL jar — available in Natural only. The per-mL price is meaningfully lower on the 500mL, so if you're already using tallow as your primary cooking fat, the 500mL is the better value. A household cooking tallow daily (two adults, 1–2 tablespoons per cook) will work through a 250mL jar in under two weeks; the 500mL gives you more headroom between orders.

Freshness note: Tallow has a 2-year shelf life sealed. Once opened, the 500mL is still a very comfortable size given how slowly tallow goes off compared to plant oils. Unlike an opened bottle of olive oil or seed oil — which should ideally be used within 2–4 weeks of opening for quality — tallow's saturated-fat-dominant composition means it remains stable at room temperature for months after opening with no quality concern.

Once the flavour has fully infused, the garlic is filtered out, leaving a clean finished tallow with no visible plant matter and the integrated mellow-roasted character throughout.
